SPECIAL PECORINO CHEESES
Pecorino Tiu Bore
This hard, cooked cheese is made exclusively from sheep’s milk. It is usually white or light straw yellow in colour, compact, with a strong, aromatic flavour. It is only found on the shelf after a 6 months maturation period. Grated, it brightens up any dish with the typical taste of sheep’s cheese, leaving a stronger and more distinct sapour than other cow cheeses (for example grana, a cheese similar to parmesan).
Ingredients: Sheep’s milk, rennet, salt, natural milk enzymes.
It is the classic sardinian long-life sheep’s cheese, excellent when grated, ideal for dressing a wide selection of pasta dishes or for eating as an alternative to dessert after your meal. Keep at between 6°/8° C in fridge.

Fiore di Saccargia
This is the main sardinian sheep’s cheese. Its origins go way back when, but even today shepherds in the Barbagia region produce it by means of lamb’s stomach and old traditional methods. These production techniques have been modernised by us while maintaining thei essential traditional nature. It is a hard white raw cheese. Depending on its maturity, it can be either eaten with bread or biscuits etc or grated. It is typically round with a dark rind.

As this is a mature cheese with a strong and distinctive flavour, it can be used with all dishes even the simplest, for example with “ frattau bread”, rendering it tastier and more characteristic. Keep at between 6°/8° C in fridge.
