RICOTTA CHEESES

Fresche, bianche, leggere e gustose; sono le ricotte, prodotte con varie lavorazioni, ma sempre con siero di latte di pecora. Ottime in tavola con verdure e salumi.

Ricotta Fresa

The origins of this ricotta are lost in the mists of time. Sardinian shepherds, in order to store it over long periods, pressed it with a piece of cloth (thereby differentiating it from Ricotta Mustia in terms of production technique) creating the characteristic form of a flattened loaf. It’s compact, white and firmer than Mustia and is exclusively produced with sheep’s milk. Tasty and full of flavour, Fresh Ricotta is eaten at the table in its fresh form, or a an exellent choice grated inits mature form.
Ingredients: sheep’s whey, salt.

Fresh Ricotta is perfect with greens and salads or with sliced salami. Keep at between 2°/4° C in fridge.

Ricotta Mustia

Mustia ricotta cheese, produced exclusively with sheep’s milk, is today crafted by shepherds in the same way as it has always been. The end result is a soft, delicate, white and compact cheese, cylindrical in shape. It is thereafter salted and smoked, using the typical cane binding “sos cannitos” around it, which leaves the tell-tale lines on its surface. It may also be spiced with peppers.

Age-old traditions and experience bring the results of Sardinia’s abundant and unspoilt pastures direct to your table. Fresh ricotta is perfect with greens and salads or with sliced salami. Keep at between 2°/4° C in fridge.
